Meet the baker...
Owner and baker, Apryl Niksch applied her passion for clean, healthy eating to open her first food business, Harvest Circle Workshop, in 2013. Her innovative Harvest Superfood Balls and baked goods became popular locally and were soon available throughout the Midwest at locations like Whole Foods and Beatrix Market, Valparaiso University (Parkhurst Dining), FLIK, and White Lodging.
In 2019, Apryl rebranded as Vintage Baked Modern, surprising and delighting customers with her too-good-to-be-true gluten-free bakes. She has developed her own proprietary gluten-free flour blend that serves as the foundation for a line of baking mixes for foodservice kitchens where she trains bakery staff how to create premium gluten-free products for customers.
